Can a single machine have its own working hours?

Yes, per-machine overrides win over the workspace default. Useful for a cell that runs a 24/7 shift while the rest of the shop is on day shift.

How are breaks handled during a long operation?

Operations can be configured to either pause through breaks or run through them. The default per workspace is pause; override per operation if needed.
